Cheese & Ranch Crackers (Keto friendly)

So, I am always on the hunt for healthy snacks for both me and my girls. I noticed I was left feeling bloated and uncomfortable after eating breads & having sugar....so finding ways to enjoy enjoying without feeling like crap was my goal. And again, its a bonus knowing my girls can have it without feeding a ton of sugar or carbs their way too. So, the nitty gritty.... What you need: 1 3/4 C almond flour 2 Tbsp coconut flour 1/2 tsp garlic powder 1/2 tsp xanthan gum 1/2 C unsalted butter 1/2 C shredded cheese (I used taco cheese) Salt to taste Ranch powder to taste

What you need to do: 1. In either a food processor or in a stand mixer, add the dry ingredients together. Mix or pulse until well blended. 2. Cut the butter into small, thin cubes and add both butter and cheese into the processor or mixer. Process or mix until everything is combined, creating a ball.

3. Remove the dough, roll into a long log shape, about 1 1/2 inches in diameter. Cut in half and wrap in plastic cling wrap. 4. Freeze logs for 1-2 hours. They should be firm, but NOT frozen/solid. 5. Preheat oven to 325F and line 2 baking sheets with silicone mats. 6. Use a sharp knife and slice the logs 1/3 inch thick. Place slices on the prepared baking sheets. 7. Bake 5 min, then remove from oven & cover with parchment paper. Use a flat bottomed glass to press down & flatten each crisp to less then 1/4 inch thick. 8. Bake 10 min & rotate pan. Bake another 10 min, until golden brown & firm to the touch. 9. Remove & add additional salt & ranch seasoning if preferred. 10. Let cool completely, enjoy!
