9inch springform pan - keeps a nice clean look
Spatula for easy folding without over mixing
Glass dish for mixing
Dish covers for icing or other items if you're 'waiting'
Hand mixer - for icing this is easier than using a stand mixer
Unbleached parchment paper for bottom of springform
Filling (1st step):
400g apples of choice (approx 4 medium apples) - Make sure to use fresh apples for the best flavor and texture. Granny Smith or Honeycrisp apples work wonderfully in this recipe. They bring a perfect balance of tartness and sweetness.
60g unsalted butter
100g brown sugar (I made my own - 100g cane sugar & molasses to taste)
2 tsp cinnamon
1/2 tsp nutmeg
1 Tbsp flour
How to: Cut apples into small pieces and place in medium to large saucepan. Add rest of ingredients & cook on medium heat until tender & glossy. Add flour and stir until thick. Remove from heat.

Base (2nd step):
1 stick of unsalted butter (melted)
110g of active starter
180g sour cream (or Greek plain yogurt)
5g vanilla
200g flour
200g cane sugar
10g baking powder
3g baking soda
How to:
Preheat oven to 400. In a bowl add melted butter, starter, egg, sour cream and vanilla. Mix. Then add (folding in after each item is added) flour, sugar, baking soda, baking powder. Do not mix, fold. Fold in 2/3 of the filling into the dough & fold until incorporated. Line the bottom of the springform pan with unbleached parchment paper and pour the batter mix into the springform (see pic below on how to create a side so you have room for filling on top at the end). Bake for 30min - it will be done when internal is 195 degrees. Allow to fully cool.

Icing (3rd step): 115g (4oz) cream cheese 60g (1/4c) butter room temp 80g (1/3c) brown sugar (I used my own here again. Refer to above)
60ml (1/4c) whole milk (or creamer)
Vanilla to taste
1 tsp cinnamon
Salt to taste
How to:
To a small saucepan, add sugar, milk (or creamer) & salt. Stir until sugar is dissolves and slightly thickens. Remove from heat & add vanilla. Pour into bowl with cream cheese, cinnamon, butter & beat with hand mixer until creamy. Chill 20 min to thicken.
Finishing the Sourdough Apple Cake
Add the remaining of the filling onto the top of the cake & pipe your icing. Make your own design and enjoy!
